STEP 1 In a medium bowl, add cucumbers, tomatoes, and red onion. Season with salt and pepper and toss with lemon juice and a few tablespoons of oil. Set aside. STEP 2 Divide lamb into 6 portions. Roll each portion into a ball and smash into a pita. STEP 3 Heat a large, heavy-bottomed skillet over medium heat. Add oil to pan and, in batches, cook pita burgers, lamb side down, until cooked through. Flip and cook for an additional 3 minutes. STEP 4 Remove from heat and top with tomato and cucumber salad. Drizzle with Haven’s Kitchen Golden Turmeric Tahini and garnish with feta. Serve.
